As soon as the sun rises, there's no time for sleep! The day starts with a plate of boiled eggs and colors everywhere.

• Why do we color them? Long ago, our Pharaonic ancestors saw the egg as a symbol of new life, and we inherited this art from them.

Now we come to the "beast" everyone's waiting for.. feseekh! Those who don't love it are missing out big time, and those who love it know it's "endless love".

• What's the secret? The Pharaohs used to offer salted fish as a gift to the Nile so it would bless them, and we still hold onto this gift to this day.

• The green army: Feseekh isn't complete without "green onions" (which used to ward off envy and evil spirits) and lots of lemon and crispy lettuce.

You know green chickpeas or "molyane"? This is what gives flavor to walks and outings. The sound of peeling and eating it while we sit in the garden is exactly the "sound of spring" in Egypt.

Sham El-Nessim means "outside the house". The Nile transforms into a carnival of boats and feluccas, and gardens become carpeted with mats and heartfelt laughter. This is the spirit that makes this day special, that we forget everything and return to nature and our simplicity.
